It is recommended to seal your projects and allow them to cure for at least 24 hours before you place them outside.  Painting and sealing your Jack O' Lantern is recommended to bring you the most protection for years of continued use.  DO NOT leave the Jack O' Lantern exposed to wet weather conditions as it may warp the wood and prevent future use.
